I share my favorite easy winter dessert recipe in my Holiday Homemaking 2022 Housewife Diary Vlog.
This recipe is perfect for a quick & easy holiday bake and its a fun seasonal flavor.

Without further ado, let's bake!
CUPCAKE BATTER
2 sticks (1 Cup) Unsalted Butter, softened
2 eggs
2 cups All-Purpose Flour
2 cups Sugar
4 tablespoons Cocoa Powder
1 cup Boiling Water
1/2 cup Buttermilk
1 teaspoon Vanilla Extract
1 teaspoon Baking Soda
1/2 teaspoon of salt
FROSTING
2 sticks (1 Cup) Salted Butter, Softened
4 cups Powdered Sugar
1 1/2 teaspoons Peppermint extract
3 tablespoons of Heavy Cream or Milk
10 Peppermint Candies, Finely Crushed for Topping
Preheat oven to 350 degrees.
CUPCAKE BATTER
In a small saucepan, melt 2 sticks butter, add & stir in cocoa powder.
Pour in 1 cup of boiling water & let mixture boil for 20 seconds. Remove from heat & set aside.
In a separate small bowl, mix together eggs, vanilla extract, buttermilk, and baking soda.
In another bowl, stir together salt, sugar, and flour.
Next pour the chocolate mixture into the flour mixture bowl and mix until halfway combined.
Add in the egg mixture, then mix until fully combined.
Line muffin tin with cupcake holders or triangle-cut parchment paper. (Or butter the muffin tin)
Divide the batter evenly into the muffin pan, filling 2/3 full.
Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Let cupcakes cool.
FROSTING
You can beat together frosting mixture with whisk or add ingredients into a food processor & mix on high.
Beat the softened butter until halfway smooth.
Then add in the powdered sugar.
After halfway combined, add in milk & peppermint extract.
Beat until completely smooth.
Use a frosting tool & swirl frosting on top of cupcakes. I used my favorite, beginner-friendly icing tool.
Garnish with finely crushed peppermints & top each cupcake with a peppermint candy!
